Blend of very rare, feral English, French, and Old American traditional cider apples gleaned from lost cider orchards in Sonoma County. Varieties include Nehou, Muscat de Bernay, Porter’s Perfection, Yarlington Mill, Foxwhelp, Tremlett’s Bitter, and Roxbury Russet. Organically grown, from the 2014 harvest. Fermented to dryness in small batches by variety, then blended, aged, and bottle conditioned using organic cane sugar as dosage. Unfiltered, unpasteurized, minimal sulfites. 40 cases. 100% organic fresh-pressed heirloom and tannic cider apples from the 2015 and 2016 harvests, including Gravenstein and Nehou from west Sonoma County, Autumn Rambour from southern Mendocino County, and Transcendent Crabapple from Tilted Shed’s own cider orchard in Sebastopol. Inclinado is Spanish for “tilted,” and this is our California twist on a traditional Basque sidra. 100% organic Sonoma County Gravenstein apples pressed during the 2015 harvest and fermented with natural yeasts in neutral French oak barrels. Bottled still in hock bottle with straight corks. No added sulfites, unfiltered, unfined, unpasteurized. 3 barrels. Released March 2016. 8% ABV
Pronounced “Gra-VEE-va” as in “Viva la Grav(enstein)!” Blend of 100% organic fresh-pressed Sonoma County heirloom and traditional cider apples. 50% Gravenstein, west Sonoma County’s heritage variety; 50% blend of other organic heirloom and tannic cider apples varieties, including the rare Nehou, a high-tannin, low-acid French bittersweet originally from Normandy. Fresh-pressed during from the 2015 harvest. Unfiltered, unfined, minimal sulfites, backsweetened prior to bottling with a touch of organic cane sugar. Released October 2016. 8% ABV
Blend of six varieties of fresh-pressed Sonoma County organic heirloom and tannic cider apples from the 2015 harvest. Fermented to dryness in small batches, then blended with a batch of cider infused with wood-smoked apples. Unfiltered, unfined, unpasteurized, minimal sulfites. Released September 2016. 8% ABV
Blend of fresh-pressed, late-season Sonoma County organic heirloom apples from the 2014 harvest. Fermented to dryness in the New England style, with organic raisins, molasses, and brown sugar, then aged in Heaven Hill Kentucky rye whiskey barrels for four months. Unfiltered, unpasteurized, minimal sulfites. 24 barrels. Released November 2015. 9% ABV

Our ciders are primarily available in the California, with a handful of accounts in the New York metro area and Portland, OR. Because our ciders take up to two years to ferment and age, they are released at different times of the year. You likely will not find all ciders at the same time, nor at every location. We self-distribute our kegs, as well as throughout Sonoma County. Elsewhere in California, we are distributed by Lime Ventures (CA), T. Edward Wines (NY/NJ), and PDX Wines.
